Atta is a whole grain blend of flour used in the basic dough needed for making various kinds of Roti, commonly called Chapati.
For the Perfect Roti:
1 You will need: 500g brown atta, optional - pinch of salt, 470ml of warm water, 3 tbsp vegetable oil, Skillet or Tava for cooking Roti, Rolling Pin.
2 Mix flour and salt (optional) together in a bowl. Add vegetable oil and stir. Gently add water, continually mixing until a semi soft dough. Cover with a moist cloth and rest for 10 minutes.
3 Make small balls, slightly smaller than an egg in size. Flatten and roll on dry flour with a rolling pin. It should be 4-5 mm thick and 6-8 inches in diameter and round in shape.
4 Cook in a preheated Skillet, Tava or a Griddle until golden brown on both sides. Serve with a knob of butter.
